Lindsay Hopwood - Biography.

I learnt to cook by watching my mother, who is extremely talented. She believed in learning by the Elizabeth David method, and many holidays were spent poking around markets in France, trying new things and learning that it is best to eat food in season - when it is ripe. She taught me to have inquisitiveness about food and what other people are doing with it.

Having spent my youth in the 'burbs of Dundee, I moved to Glasgow as soon as I was able. Going to Strathclyde University and falling in with a bunch of hard-drinking Norwegians prevented me from finding out about the delights of the West End. We were young and ignorant and rarely ventured past the nearest pub, which for us was Rab Ha's.

Student life made for a fairly Spartan diet and my figure was all the better for it. In the past ten years though I have dedicated a fair whack of time to food and eating. The unfortunate side effect is that I also have to spend a fair whack of time trying to prevent my bottom from spreading out and taking over the world. On that one, I've lost many battles but am still hoping to win the war.

After six years in Glasgow, I moved to London and got very interested in Thai food. Unfortunately though, I was so badly paid that I was better off when I was a student. So I got myself a job in Edinburgh, bought a flat and found a bloke.

Four years later, and one year ago, we moved to Glasgow. Alastair is new to Glasgow and it took him a while to understand why I said that I would live anywhere in Glasgow as long as its in the West End.

When I'm not working I spend a lot of time working out how to improve recipes and what foods work well together. Or generally obsessing about some new product that I've found. When I am working, I'm trying very hard not to do the same. This series of articles features my general musings on the subject.
