Celebrate in style this year at the Ubiquitous Chip. You can choose from the twinkling mezzanine level or downstairs in the main restaurant.

Turkey and white bean velouté,
ham hough and cheddar croquette, salsa verde

Confit Pentland pheasant and rabbit leg terrine,
curried piccalilli, almond milk, cumin muffin

Morangie brie mousse,
chestnut crumble, cranberry gel, gingerbread wafer

Cured pollock,
compressed cucumber, dill crème fraiche, rye crisps and poppy seeds

Roast Pentland pheasant breast,
borlotti beans, ham hough, wild mushroom, sherry jus

Seared hake fillet,
green lentil, pancetta and sprout fricassee, parsnip velouté, hazelnut oil

Baked heritage beetroot,
spelt, crushed pear, smoked curd and beetroot macaroon, candied walnut

Free range turkey,
roast tatties, caraway red cabbage, honey glazed carrots and parsnips,
sage stuffing, chipolatas, Chip ’71 gravy

Char-grilled Scotch Aberdeen Angus sirloin steak,
dauphinoise potatoes, mushroom duxelle, brandied pepper sauce (plus £9)

Organic Orkney salmon fillet,
celeriac tartare, cucumber, horseradish gel, avruga caviar

duck egg yolk, wild mushrooms, charred onion, onion velouté, hazelnuts
