Starters

Confit fennel, shallot and tomato tart fine, pickled root vegetables, mascarpone, roast garlic and basil emulsion

The Chip's own (since 1971) venison haggis, champit tatties, carrot crisp and turnip cream (our own vegetarian haggis also available)

Soused Carsphairn venison, smoked horseradish and blueberry compote,

Beetroot and whisky cured monkfish, crab and pear choucroute, scallop and dulce ceviche

Grilled black bream, haricot bean and pancetta cassoulet, leek and spinach fondue, toasted pine nuts

Pheasant, rabbit and smoked ham terrine, neep and Sauternes chutney

West Coast langoustines, served hot with garlic butter or cold with mayonnaise (plus £3)

Pistachio dusted Islay scallops, pickled apple puree, crisp pork belly (plus £3)

This year, our fortieth anniversary, finds the Chip in a reflective mood. Our chefs have always championed fresh local ingredients of quality, provenance stated clearly, whether sourced from our artisan suppliers or foraged in Scotland's hedgerows and glens.

Steak and lamb is reared in Inverurie.

Robbie and his "Sea to Shore" crew brave the waves for Scotland's freshest langoustines, the envy of Europe.

At a time when sustainable has become a euphemism for farmed, we still insist on wild, unthreatened or organic fish from MacCallums of Troon.

Garth and his team of driven hippies at "Roots and Fruits" nurture the fruit and vegetables while beans and pulses are from "Green City wholefoods."

In season wild mushrooms are supplied by Strathspey, while over on Arran Robin picks us his most flavoursome organic leaves.

Opening our doors for the first time back in 1971, we ploughed a lonely furrow for four decades until the Chip's founding principles finally became dining outs fashionable standard.
